A simple, flavorful dhal from Kandy

This is a such a simple but incredibly tasty dhal from the main chef at Polowaththa Eco Lodges. The Polowaththa Curry Powder really is a game changer when cooking dishes from this region and has changed our perception about what a curry powder really is.

This is a one pot recipe that is well worth the try!

INGREDIENTS

150 grams of dried red/yellow lentils
2-3 minced garlic
1-2 minced Shallots
A pinch of Chiliflakes 
1 whole fresh chili
1 Teaspoon of Kandy Turmeric
2 teaspoons of Polowaththa Curry Powder
Small piece of Sri Lanka cinnamon
2 pods of green cardamom
1 spoon dried Kandy Curry Leaves
1.5 dl water
1.5 dl coconut milk

Garnish: Chopped coriander


COOKING

1. Add all the ingredients to a pot except the coconut milk. Cook on low/medium heat without lid for around 20 minutes until the lentils are almost ready and all the water is gone.

2. Add the coconut milk. Bring to a boil and remove from the heat. Stir gently.

Serve with rice and some chopped coriander.
