Emanuel’s Recipe
- 1 kg green tomatoes
- 1 whole garlic
- 500 g onion / about 3 onions
- Chili Arbol for a hotter sauce or Guajillo chili for a more milder version.
- Salt, to taste
Grill the ingredients until they take on a bit of colour, either over open fire or in the oven. While still warm, add everything to a molcajete or mortar and grind together until you reach your preferred texture. Season with salt to taste.
Serve with anything that benefits from brightness, heat and depth. Tacos, fish, meat, grilled vegetables, beans or simply as it is, with something warm from the pan.
