Our "Silk Cut" Pul Biber from Hilmi Bey family farm in Kahramanmaras is pul biber at its most elegant. It tastes like red ripe sun-warmed pepper, tomato-skin brightness with a fresh red-fruit tang. The clean spicy warmth doesn’t dominate. It’s the kind of spice that makes food feel more alive not simply hotter. Pul biber, a close relative to the famous Aleppo Pepper, is an everyday staple in Turkish kitchens and it has become that for us as well.

Because of the unique curing process our pul biber makes a simple dish taste like it had more time. Just like Urfa Biber, pul biber is sun dried and then stored over night with a mix of salt and oil. This process is repeated a few days giving that umami, savory hint.

“Silk Cut” refers to this chillis texture. Instead of coarse flakes, Silk Cut is milled and cut extra fine and even, often emphasizing more of the fruit flesh and less of the tougher bits. That does two things. The mouthfeel becomes velvety and the flavor integrates more smoothly. You get less “flake texture” and more of a red, soft presence that binds a dish together.

For Hilmi Bey it’s also about sorting and drying. When peppers are harvested fully ripe and dried cleanly and carefully, they keep their sun-warmed sweetness and aroma. The finer cut then releases flavor faster into fat and liquid which is why Silk Cut feels so easy to use.

Silk Cut is built to carry flavor in fat and heat. It’s as good as a finishing spice for fragrance as it is as a base in oil, butter and tomato. Think of it as the bridge between paprika and chili with color, body and a soft heat that makes food feel more satisfying without taking over.

Ways to use it:
Bloom in fat: stir into butter or olive oil over low heat until the aroma opens. Then spoon over eggs, vegetables, fish or rice.
Tomato base: in tomato sauces, shakshuka, beans and lentils. It builds a slow-cooked impression fast.
Finishing: a pinch at the end for red perfume on mezze, soups and grilled food.
Yogurt or tahini: fold into labneh or tahini for a creamy red dip with gentle warmth.
Rubs: mix with salt and oil and rub onto chicken, beef lamb or mushrooms.

Dosage
Start with 1/2–1 tsp per 2 servings. Use it in layers. A little early for body and color then a final pinch right before serving for fragrance.

If you want to get adventurous:
Silk Cut in brown butter over roasted cauliflower or mushrooms to make it red, nutty, addictive.
A pinch over vanilla ice cream with berries to add soft pepper warmth deepens the fruit.
Stir into honey inot lemon and brush onto grilled chicken near the end.
