Our Shawarma spice blend is inspired by Samir Kersh culinary memories of eating shawarma in Palestine.

We have added our own twist to it with Chili Guajillo from Zacatecas, Kandy Curry Leaves and Goraka from Sri Lanka. Guajillo really adds a tart and fruity heat while the curry leaves gives the blend a herbal, citrusy flavor. Goraka helps break down the fibers while marinating and adds an acidic punch that really works well with the other spices in the mix.

We just love this spice blend and our collaboration with Samir and Rima over at Abowl&Plates. It really is a game changer in your kitchen and we are very happy with the final result. It took some time to get this one right but it ended up as one of our best blends so far.

Shawarma is a Middle-Eastern dish where marinated meat is placed on a rotating spit and grilled for a long period of time. The word Shawarma is believed to be an Arabic rendering of the Turkish word cevirme which literally means turning.

There are many different varieties of this dish. In Turkey they call it doner kebab, in Greece they call it gyros. In many parts of the Middle East they call it Shawarma. There are also versions in Northern Africa and a break away taco in Mexico called Taco El Pastor that was created by Lebanese immigrants in Mexico City.

The main difference between them is the seasoning. The use of spices.

The Shawarma blend can be used in a number of ways. Either through a classic shawarma style rotisserie where slobs of marinated meat are stacked on top of each other and slowly grilled under rotation. This works beautifully with large mushrooms in an oven if you want a vegetarian option.

The easiest way to cook with this spice is to either stir-fry marinated lamb on high heat with butter or coat a chicken and pop it in the oven for an hour.

A recommendation is to sprinkle some extra Shawarma spice blend and salt on top of the dish to elevate the whole flavor profile.

Serve in a bread like pita, with rice/couscous/ bulgur or just a fresh tomato, cucumber, parsley sallad.
