Zather is a unique herb with intense green, sun-warmed cool heat with an almost sweet finish that hints at green olive. You can really taste the terroir in this wild-picked zather from Hatay. Stone, sun, wind and Mediterranean landscape. 

For us this spice is like a middle eastern Herbes de Provence in the way that you get a first touch of Oregano, followed by loads of thyme and rosemary finish. It works as an everyday seasoning in sallads, omelettes, stews and roasted veggies.

Zather is essentially a wild thyme-type herb, but the flavor often sits between thyme and oregano, with a clean peppery bite that lightly grips the tongue. Wild-picked changes the expression. Wild herbs rarely grow in perfect soil as they deal with sun, wind and dry stretches and respond by producing more aromatic oils. That’s why truly great zather tastes concentrated, not hay-like but electrically green.

Hatay sits where Mediterranean air meets mountains and inland heat. That contrast shapes the herb. Warm days and cooler nights often give aromatics a brighter green top note, more structured herbal body and a longer finish. Drying is the craft that decides everything. Too aggressive and thyme herbs go flat. Too much crumbling and the top notes disappear.

Zather loves heat, olive oil, and acidity. Bloom it in fat when you want depth, then always save a final pinch for the end to keep that wild, green perfume alive. It makes simple ingredients like tomato, eggplant, zucchini, beans, feta, eggs, hummus feel instantly Mediterranean

Ways to use it:
Finishing: sprinkle right before serving over salads, feta, labneh, eggs, and roasted vegetables.
Herb oil: stir into olive oil (optionally with lemon or sumac) and drizzle over tomatoes, sallads and grilled foods.
Yogurt or cheese: mix into yogurt or labneh with garlic and salt for a fast creamy dip.
Grilled & pan-roasted: rub onto mushrooms, zucchini, eggplant or chicken with olive oil and salt.
Beans & grains: fold into hot lentils, beans or bulgur with olive oil so the aromatics bloom.

Taste collaborators:
Olive oil, yogurt, labneh, feta, tomato, eggplant, zucchini, lemon, sumac, garlic, sesame, tahini, chickpeas, lamb/chicken, cucumber, pomegranate.

Dosage:
Start with ½–1 tsp per 2 servings. Zather loves layering. Use a little in the base (oil/yogurt/warm dishes) then a final pinch on top for maximum green aroma.

If you want to get adventurous:
Sprinkle zather over watermelon, feta, olive oil.
Make a zather-tahini for roasted cauliflower and finish with lemon zest.
Stir zather into brown butter and spoon over grilled corn or mushrooms.
