Dried mint is one of those ingredients that can define an entire cuisine. In Turkey it’s not a background herb, it’s a signature note found in yogurt dishes, spice blends, butter sauces, legumes and marinader.

Our Mint from the banks of the Euphrates has bright green, sun-warmed subtle taste that ends up like the most refreshing cucumber water. A flavor that can make a dish feel clearer and deeper at the same time. Our first dish was this mint immersed in honey roasted carrot slices!

The river valleys and agricultural landscapes along the Euphrates have supported farming for millennia, with a strong tradition of herbs, spices and careful drying as a way to carry flavor across seasons.

The Euphrates region has an agricultural heritage built on water, heat, and rhythm. When herbs are grown and dried in a landscape where the sun is strong and the air is often dry, the expression changes as the aromatics concentrate and the green profile becomes more structured. That’s why this mint is a little thicker, with more leaf and less perfume.

The craft behind this mint lives in the harvest and the drying. It’s picked when the leaves are at their most aromatic, then dried quickly but gently. That’s why it keeps both a fresh top note and a warm, herbal body. This mint is both clear and deep. It can cool a dish, but it can also give it length.

Flavor palette
Top: bright green mint, light menthol
Heart: sun-warmed herbal body, gentle sweetness
Base: refreshing cucumber-water finish, long green length

Mint is often treated as a last-second garnish. Euphrates Mint can do that but the real secret is that it shines across three temperatures: cold, warm, and hot.
Cold gives the cleanest green brightness, warm brings out round sweetness and subtle menthol-spiced intensity. It can be a leading note or a finishing touch depending on how you handle it.

Ways to use it:
Cold “mint-salt” finishing: crush with flaky salt and sprinkle over tomato, cucumber, feta, eggs, or melon.
Warm in soups/stews: stir in near the end of lentil soup, bulgur, beans, or chicken stews so it lifts without turning perfumey.
Hot mint oil (15 seconds): warm oil, bloom the mint for 10–15 seconds, and pour straight over yogurt or labneh or roasted eggplant.
In mezze cream: fold into labneh or yogurt with lemon zest and garlic which is perfect alongside grilled foods.
In the salad’s “heart”: mix with olive oil and lemon, then massage into thin-sliced onion or cucumber before building the salad.

Taste collaborators:
Yogurt, labneh, cucumber, tomato, lemon, garlic, olive oil, lamb, chicken, bulgur, lentils, eggplant, feta, sumac, pomegranate, Pul biber, Urfa biber

Dosage:
Start with 1/2 tsp per 2 servings. Mint can dominate if you push too hard so build in layers instead: a little in the base, then a pinch on top. In mint oil, 1/2 tsp is often enough because heat releases aromatics fast.

If you want to get adventurous:
Mint over strawberries with salt and a touch of olive oil is awesome.
Stir into butter and melt over grilled corn or roasted carrots.
Make a mint tahini (tahini with lemon, water and mint) for roasted carrots, cauliflower or other veggies.
