THE way to make Paprika

At The Pepper Quest, we’re fortunate to work with growers who treat their crops not just as produce, but as cultural treasures. In southern Hungary, the Szabio family has done exactly that for generations, and we are proud to now bring in their beautiful spicier paprika powder from this years harvest. 

The process is as beautiful as it is meticulous.

Once harvested at peak ripeness, the peppers are packed into long mesh bags and left to cure in the open air and autumn sun. Over four to five weeks they deepen in color, concentrate their sweetness, and develop the aroma that sets this paprika apart. From there, the peppers are destemmed, sliced, gently dried and finally milled on site, a transformation that requires around ten kilos of fresh peppers to yield a single kilo of finished powder!!!

The result is a paprika with vivid color and layered flavor: sweet, slightly smoky, and full of warmth. For the Szabio family, it’s a continuation of heritage. For us and our sourcing collaborator Cipo, it’s a reminder of why we do what we do, to bring these traditions and their unforgettable flavors, into your kitchen.
