      Batak Pepper: Indigenous to Indonesia's Lake Toba region, offers a vibrant citrus aroma reminiscent of lemongrass and lime, accompanied by a mild numbing sensation similar to Sichuan pepper.

      Why It's Included? Its bright, citrusy notes and subtle tingling effect make it an excellent match for seafood, enhancing natural flavors while supporting complementary ones.

      Maqaw: Also known as mountain pepper, is a small berry native to Taiwan and Southeast Asia. It exudes a lemony fragrance with hints of lemongrass, thyme, ginger, citrus oils with a finishing bitter peppery punch.

      Why It's Included: Its complex citrus and herbal notes complement the delicate flavors of seafood, adding depth and freshness to dishes.

      Vinh Linh Late Harvest Pepper: Harvested at peak ripeness in Vietnam's Quang Tri province, boasts intense flavors with notes of sun-dried tomato and baked bread, finishing with a balanced lingering heat.

      Why It's Included: Its robust and complex profile adds a savory depth to seafood dishes, enhancing their natural umami and adding touch of heat.

      Hainan White Pepper: Originating from China's Hainan Island, this white pepper offers a pungent cedar-like aroma with floral and earthy undertones.

      Why It's Included: Its subtle heat and aromatic qualities make it ideal for delicate seafood dishes where a gentle spice is desired.

      Sicilian Sea Salt: Harvested from the pristine waters off Sicily's coast, this sea salt is rich in essential minerals like magnesium, potassium, and calcium, offering one of the cleanest, oceanic flavors we have tasted.

      Why It's Included: Its pure taste enhances the natural flavors of seafood without introducing unwanted additives. Also perfect to combine with the other spices in the collection to make mixed salts.

      ErJingTiao Chili Flakes: These chilies are prized for their mild heat with grassy and fruity undertones. They offer a balanced spiciness with a hint of sweetness.

      Why It's Included: Their moderate heat and fruity notes add a gentle warmth to seafood dishes, enhancing flavors without overwhelming the palate.

      Batak Pepper: We often sprinkle freshly ground Batak Pepper over grilled fish or incorporate it into marinades for shrimp or squid to impart a zesty kick. It's also amazing in ceviche where it adds a unique twist to the traditional preparation. Paring Batak Pepper with salmon or mussels are also two favorites.

      Maqaw: Crush Maqaw and use them to season steamed fish or seafood soups. Their bright, lemony flavor pairs wonderfully with shellfish and white fish varieties. Especially nice paired in yogurt sauces with lemon and herbs. Also really enhances the flavor of ginger and pepper.

      Vinh Linh Late Harvest Pepper: Use freshly ground to season seared tuna or add to the batter for fried herring, calamari or fish tacos. Perfect in a marinara or in the wok with shrimp and greens. Its depth of flavor also complements seafood stews and shrimp chowders.

      Hainan White Pepper: Lightly toast and grind Hainan White Pepper to season poached fish or seafood risottos. Use whole when poaching cod. It's also excellent in creamy sauces served with shellfish or white fish. Use in batter for fried fish.

      Sicilian Sea Salt: Use to season fish filets before oven baking or sprinkle over freshly shucked oysters. Its mineral richness also makes it perfect for seasoning seafood pasta dishes. Use it to make mixed salt with Batak Pepper and Er Jing Tiao Chili flakes or Maqaw and Vinh Linh Late Harvest Pepper.

      ErJingTiao: Sprinkle over grilled shrimp or add into seafood stir-fries for a subtle heat. They also work well in spicy seafood broths and sauces. Piri Piri shrimp, salmon bowls, tuna melts, fried herring, sauces for deep fried seafood, Sichuan spicy boiled fish.
