Sothys Red Kampot is just amazing. Such a unique handicraft. Hand sorted with a tweezer so only the most mature pepper is gathered before washed and sun dried. This makes red pepper the most mature and aromatic pepper of the different stages of maturing. Red Kampot tastes like peppery warmth with red aroma. Floral citrus lift, honeyed fruit and a soft, rounded heat that doesn’t shout. 

It’s also where the GI becomes especially meaningful. Sothys pepper is protected by a Geographical Indication, tied to a defined origin and standards which helps preserve the kind of meticulous harvesting and handling that ripe pepper demands.

This is the pepper that takes us straight back to Cambodia and our time with Sothy at her farm. The best thing we ate there was a cookie with chocolate chips and red pepper. A perfect reminder that red Kampot can be both spice and dessert aroma at the same time.

Red Kampot is about ripeness and selection. The berries stay longer on the vine until the fruit is fully developed, shifting the pepper from sharp to more balanced and perfumed. It gives more floral lift, more red fruit, softer warmth. That’s also why red pepper demands precision after harvest as you want to preserve aroma without turning jammy or heavy.

The GI system is a big reason Kampot became famous. When an origin is protected, “Kampot” is anchored to traceability, a defined geography and a quality framework that helps small producers get paid for doing things properly. For you as a cook it means the name signals a sensory identity tied to place. Like we are trying to do with all of our spices and the people we work with.

And the region really adds flavor. Kampot is coastal, seasonal, warm, and humid. A terroir that often creates more aromatic lift and less blunt aggression. In Sothy’s red pepper, that shows clearly as it perfumes first, warms second and leaves a fruity, lingering finish.

Red Kampot is made for moments where you want pepper with loads of aromatic fruitiness and length. It loves butter, seafood, sallad, sauces, fresh herbs. It feels and tastes luxurious. Use it late for perfume or a touch earlier when you want it to immerse for example carry a sauce.

Ways to use it:
The chocolate moment (our favorite): coarse-crack over brownies, chocolate ice cream or in chocolate-chip cookies.
Butter and seafood: stir into melted butter and spoon over prawns, lobster, fish, or grilled corn.
Fruit and dairy: strawberries, orange or pineapple with yogurt and crème fraîche and a pinch of red pepper.
Pepper as finishing: tomatoes, grilled vegetables, carpaccio, or burrata right before serving so you really get the aroma.
Honey glaze: mix honey with lemon and a pinch of red pepper and brush onto grilled chicken, salmon or roasted squash.

Dosage:
Start with ½ tsp per 2 servings. Red Kampot is aromatically powerful. Use less, then build with a final pinch at the end.

Red Kampot over chocolate truffles with flaky salt.
In a citrus salad orange with olive oil and pepper with toasted nuts.
A pinch in peanut sauce for grilled foods. The fruitiness is amazing.
